Jayde Grindlay and Carlos Carosi

Oct 30, 2026, updated Oct 30, 2026

After becoming friends through work, Jayde and Carlos caught up while on separate trips in Europe – the start of a lasting romance.

Jayde guessed he was planning to propose when Carlos – a go-with-the-flow type of person – planned a hike on Cradle Mountain while on holiday in Tasmania, and asked Jayde to get “dressed up” for it. The couple said “I do” at Al Ru Farm, embracing the last-minute changes they had to make due to rain. When the reception had to be moved inside, Jayde leant into the romantic, candle-lit dinner feel. “The slight drizzly rain added a really magical feeling to the day,” she reflects. “It was still the best day – you just have to embrace the fact that whatever happens, you still get to marry your person.”

What did you love about your dress?
My dress was my dream dress, I loved that it was an off white colour and being silk dupion it had an amazing texture to it. I wanted a big dramatic veil but we couldn’t find any material big enough that would match the colour of the dress. The week before the wedding my dress maker somehow worked her magic and sourced the perfect veil material. I also loved that we made the bustle of the dress in the front, which made it feel like a different dress for the reception part of the day – also made it easy to dance for hours!

What was your inspiration behind the styling?
I love dramatic, vintage, moody tones mixed with a cutesy fun vibe. It’s just my two personalities so I knew I wanted to try and incorporate both on the day. I tried to focus a lot on how the wedding would feel as well as look, and I wanted our guest to feel like were part of a cosy, whimsical and magical day. When we had to shift last minute (the day before) to be inside the barn at Al Ru rather than on the lawns outside, I had to change a bit of the styling. I leaned into a romantic, dark, candle lit dinner complete with a disco ball as I knew lighting was important to me, as well as extra silk draping for behind the cake table and the dance floor outside.

What would you recommend for anyone else planning their big day?
Always have a back up plan! I did not have a Plan B for bad weather, even though our entire wedding was outside. I would have saved a lot of stress the week of the wedding if I had just had a Plan B. We had to re-do our seating chart and pick up a new one the day before the wedding. I would also say to expect that things won’t always go to plan, such as my hairdresser cancelling on me three weeks prior, but even so it will still always be the best day if you embrace the fact that whatever happens you still get to marry your person!
