A twist on the traditional turkey, these delicious eucalyptus honey-grilled turkey skewers can be pre-prepared for quick and easy Christmas Day entertaining.

for honey
10g eucalyptus leaves
200g honey
200g water
Place all ingredients in a pot and reduce by half, set aside at room temperature.
for turkey skewers
700g turkey breast or thigh sliced
5g ground coriander seeds
2g ground cloves
2g ground cardamom
5g salt
1g white pepper
Place all ingredients in a mixing bowl, mix thoroughly to coat the turkey in the ground spices. Slide the dry meat onto skewers and set aside overnight.
Cook skewers on a barbecue plate for about 3 minutes on each side, or until well-coloured and cooked through.
Baste the skewers with the honey just before they come off the barbecue, then once again as they’re being served.
