Wattle seed and burnt honey porridge

Warm up your weekend mornings with Kane Pollard’s wattle seed and burnt honey porridge recipe, which can be prepared on the kitchen stove, or over the campfire on your next outdoor adventure.

serves 4

1 tbsp ground wattleseed
1 tbsp butter
4 tbsp honey, plus more to finish
2 cups milk
1 cup traditional oats
2 tsp salt

In a heavy based pot on medium heat, lightly toast the wattle seed until fragrant.

Add the honey and allow to darken for a few seconds before adding the butter, stirring the whole time.

Add the milk and oats, bring up to a simmer then drop the heat to low. Cook the porridge until creamy and the oats are tender.

Season with the salt and more honey if desired.
