
Enjoy this twist on a brunch time favourite, which pairs sweet ‘n’ sticky hot honey with moreish salty bacon.
Makes 2
4 streaky bacon slices
3 large eggs
1 tbsp butter
sea salt & cracked black pepper
1 burrata
2 tbsp hot honey
2 bagels, split in half
Place bacon into a cold pan, set over medium heat and cook until golden and crisp, or until cooked to your liking. Melt the butter over medium heat in a small frypan, whisk the eggs in a small bowl, season with salt & pepper and cook eggs until scrambled to your liking.
Split burrata in a small bowl. Lightly toast cut side of bagel halves under the grill. Divide eggs and bacon between two bagel bottoms. Add burrata and drizzle over hot honey. Top with bagel lid and serve immediately.
