
Keep cool with these thirst-quenching, adults-only popsicles that are as fun as they are delicious – and simple to prepare.
Makes 8
500g raspberries
1/4 cup caster sugar
240ml Aperol, chilled
480ml prosecco, chilled
Orange slices and thyme sprigs to garnish
Place raspberries, sugar and ⅔ cup water into a food processor and blitz. Strain the mixture through a fine sieve to remove seeds. Pour into popsicle moulds and freeze overnight.
To serve, divide Aperol between glasses, add popsicles, garnish with orange and thyme and top with prosecco.
