Five-star luxury Adelaide hotel hits milestone
A new hotel is taking bookings ahead of its opening as the city clocks some 1000 hotel rooms under construction. See the gallery of Adelaide’s latest touch of luxury.
Crystalbrook Sam on Halifax Street has flung open its reservations book despite its official opening not being slated until late December.
Tourism Minister Emily Bourke recently told InDaily that 1000 hotel rooms are slated to open over the next 12 months across the state, attributing the activity to SA picking up more major events like the MotoGP.
Others being built include the 5-star, 150-room InterContinental Barossa Resort and Spa in Lyndoch and a 248-room hotel in the $600 million Market Square development at the Adelaide Central Market.
The latest 196-room hotel has Sam Suites featuring two bedrooms, two bathrooms, a “deep-soak bathtub”, a mobile cocktail and aperitivo cart, a living space and a dining area for six people.
It will have a 120-seat Martines bar and grill on its rooftop, Café Sami in the hotel’s lobby, the Eléme Day Spa, an outdoor heated pool, a sauna, a gym, and three meeting and event spaces with a capacity of around 100 people.
“Adelaide has a distinct creative energy and an extraordinary food, wine and cultural spirit; Crystalbrook Sam has been designed to belong here, bringing together locally made art, South Australian produce and generous Adelaide hospitality,” said Crystalbrook Collection Hotels and Resorts CEO Geoff York.
Crystalbrook Sam is the first hotel from Crystalbrook Collection Hotels and Resorts to open in South Australia. It was designed by PACT Architects and built by BESIX Watpac, with its construction featuring geometric sawtooth rooflines, bronze-coloured metals and locally made bricks and concrete.

The site previously housed Sedsman Legal and sold for $9,240,000 in March 2015, according to realestate.com.au. A groundbreaking ceremony, attended by Premier Peter Malinauskas, was held for the hotel in July 2024.
The Crystalbrook Collection includes hotels and resorts in Cairns, Sydney, Byron Bay, Newcastle, Brisbane, Sydney and Canberra.
It comes as fellow luxury hotelier Hilton announced in May of this year that it would be relocating from Victoria Square to a new site at 299 Pirie Street, which would span 27 storeys and would include 251 rooms.
