Like the fit out, the music and the people of 1000 Island, a drink has to be fun to get on the bar’s list. This is a late-night haunt that encourages you to lean into guilty pleasures and embrace them in earnest.
Rather than keeping open bottles of Ocean Spray behind the bar, the Cosmo Cooler is served long and uses a cranberry soda from Capi for its 1000 Island twist.
A spin on a Tommy’s Margarita, the Smoked Pineapple Margarita adds smokiness by using mezcal, charred pineapple cordial and a rim salted with red gum-smoked salt and Tajín.
The first drink created for 1000 Island, and not likely to come off the menu any time soon, this Piña Colada uses Nocello to enhance the mouthfeel – and just 25ml of coconut cream. It’s a drinkable Weis bar.
